Cherry Bakewell Pie

Apparently cherries are a natural source of melatonin, which is a brilliant sleep aid, and certainly tastier than taking it in tablet form.

If these warm nights have been making it challenging for you to keep in sync with your normal sleep patterns, why not try increasing your intake of cherries? Yum!

Ingredients

For the pie:

  • 3 large eggs
  • 75g fructose
  • 75g xylitol
  • 150g plain flour, sifted
  • 1 tsp almond essence
  • 1 tbsp water
  • 15g flaked almonds
  • 100g low sugar cherry jam
  • 300g pitted cherries in light syrup or juice, drained

Instructions

Step 1:

Mix the cherries and jam together and spoon them into an oval baking dish.

Step 2:

Whisk up the eggs, xylitol and sugar using an electric whisk or mixer, on a high speed for all of 10 minutes until light and fluffy!

Step 3:

Fold in the flour and almond essence using a spatula.

Step 4:

Pour the cake batter over the fruit and bake on 180°c for 35 minutes. Serve with fresh vanilla custard or ice cream.

P.S. Top tip: Add a sprinkling of oats and Demerara sugar for a crunchy topping.
