Cherry Clafoutis

With a week that contains both International Women’s Day and Mother’s Day, a recipe that celebrates and honours the impact of those inspirational female figures in our lives is definitely due the focus.

Our Head of Marketing Emily has provided just that with a recipe that her Mum used to make as a treat when she was younger. This particular recipe conjures up memories of delicious Sunday dinners enjoyed by the entire family as well as images of the beautiful garden created by Emily’s Mum that had a cherry tree at its centre.

Ingredients

For the cherry clafoutis

  • 200g fresh cherries (stones removed)
  • 1 tablespoon ground almonds
  • 3 eggs
  • 50g sugar
  • 1 tablespoon coconut sugar
  • 70g plain flour
  • 250ml almond milk
  • 1/2 teaspoon almond extract
  • 2 teaspoons vanilla extract

Instructions

Step 1:

Preheat your oven to 18o•c

Step 2:

Lightly grease a medium sized baking dish with a very small amount of low fat spread and sprinkle the ground almonds and little flour over to cover the base.

Step 3:

In a separate mixing bowl whisk together the eggs and both types of sugar. Once combined add a healthy pinch of salt and sift in the flour, whisk to combine.

Step 4:

Next add the milk, vanilla extract, and almond extract. Whisk together until nice and smooth.

Step 5:

Pour the batter into the floured baking dish. (Usually the cherries are added in the beginning but Emily’s Mum always dropped them into the batter at this stage so…) spacing them throughout the dish evenly add in your pitted cherries to the batter.

Step 6:

Bake in the oven for about 30 to 40 minutes until golden brown. The clafoutis will firm up slightly as it cools.

Step 7:

Serve with a dollop of low fat creme fraiche for a beautiful Mother’s day dessert.
