Spiced Pumpkin Cupcakes

At The Skinny Bakery our philosophy is that cakes should taste fabulous and be within your daily recommended calories, fat and sugar allowance.

However (!) it is essential that they taste like cake. This means they should have some fat and some sugar, otherwise they taste like meat/bread / whatever and just look like cake. Not. Cool! These Spiced Pumpkin cupcakes not only taste like cake, but they also taste of autumn and Halloween 🎃. We hope you enjoy eating them as much as we enjoy baking them! Ingredients

For the cupcakes:

  • 3 small eggs (separate whites and yolks)
  • 80g fructose
  • 130g finely grated pumpkin
  • 2 tbsp water
  • zest of 1 orange
  • 1 tsp corn oil
  • 1/4tsp cream of tartar
  • 100g plain flour, sifted
  • 1 tsp bicarbonate soda
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon

For the frosting:

  • 175g extra light cream cheese
  • 2 tbsp stevia
  • 2 tbsp fructose
  • few drops almond essence
  • 1 tbsp Pumpkin seeds (reserve for the top)

Instructions

Step 1:

Whisk together egg yolks, fructose, pumpkin, water, orange zest and oil until light and fluffy.

Step 2:

In a separate bowl combine flour, raising agents and cinnamon and fold into your eggy mix.

Step 3:

Whisk the egg whites with cream of tartar until stiff peaks form. Fold this mix into the rest of your batter.

Step 4:

Divide into 12 muffin cases and bake on 180° for 30 minutes, until golden.

Step 5:

Combine your frosting ingredients and let the mixture set in the fridge for at least 1 hour. Pipe or spread your frosting onto the cupcakes and sprinkle the pumpkin seeds on top.

P.S. Top tip: Make these for Halloween to hand out to trick or treaters, using Halloween cupcake cases and bat-shaped sugar sprinkles.
