Skinny Tiramisu

Lighten up this Italian favourite using low fat dairy, fat free egg whites and sugar alternatives.

If you can’t get your hands on Marsala wine, you can easily substitute with Brandy – use as much as you dare!

Ingredients

For the skinny tiramisu:

  • 50g egg whites - whisked til stiff
  • 250g tub light cream cheese
  • 3 tsp stevia
  • 20ml marsala (or brandy)
  • 10g fructose
  • 100ml strong coffee, made with 1 tbsp coffee granules
  • 150g pack sponge fingers
  • 10g dark chocolate
  • 2 tsp cocoa powder

Instructions

Step 1:

Let’s GO! Stir your Marsala and stevia into the cream cheese.

Step 2:

Using an electric whisk fluff up your egg whites in a largish bowl (egg whites grow a lot). Now whisk in the fructose until you have glossy stiff peaks. Carefully combine with the cream cheese mixture.

Step 3:

Next, dip sponge fingers into strong coffee for a few seconds either side then layer half of these into a 9 inch x 9 inch tray.

Step 4:

Spoon a layer of the egg white, cream cheese mixture on top. Then repeat a layer of coffee soaked sponge fingers and the cream cheese.

Step 5:

Grate chocolate over the top and dust with cocoa. Refrigerate overnight and cut into 3 inch squares. Buon Appetito!

P.S. Top tip: Instead of using a large tray, why not create mini tiramisu pots in your favourite glasses or serving bowls so they are dressed to impress at your dinner party?
