Naturally Festive Cupcakes

This time of year sees lots of beautifully coloured cakes and treats, bringing a bit of festive brightness into the shorter chilly days.

But how can we go about recreating these bakes without the need for synthetic food colourings? Here at Skinny Bakery, we are constantly on the lookout for ways to add something a bit more natural and healthy into our tasty goodness, so we have come up with a few suggestions for how to get those Christmassy colours without the need for anything artificial

For a frosty blue/green colour – try a teeny bit of blue spirulina powder

For a festive red – a pinch of beetroot powder works really well and is also great added to a stew or homemade pie

For a yuletide green – go for a little healthy addition of matcha green tea powder

For a healthy Christmas treat start with our Chocolate cupcake from our S’mores Cupcake recipe – which can be found here (with or without the marshmallows of course)

Then try adding one of the above natural colouring alternatives to this lower-fat Greek yoghurt frosting.

Ingredients

Naturally festive frosting

  • 60g of vegan cream cheese (we used Tofutti plain cream cheese)
  • 55g of vegan greek yogurt (Oatly greek style yogurt worked well)
  • Around 4tbsp of icing sugar
  • A dash of vanilla extract

Instructions

Step 1:

Blend the yoghurt and cream cheese together till smooth.

Step 2:

Gradually add in the icing sugar till you get to a good frosting consistency. This is also the point to add your chosen natural colour addition.

Step 3:

Mix in the vanilla extract at the end.
