Chocolate & Coconut Truffles

Tasty high energy treats with a real summer-time feel

These easy no-bake snacks are the delicious go-to for a healthier sweet energy boost. Made from just 3 simple ingredients these really are just the tropical treat you were looking for. Perfect for picnics or on the go they can be made in advance and kept in the fridge.

Using dates instead of lots of refined sugar ingredients means our chocolate & coconut truffles are rich in antioxidants and fibre as well as being tantalisingly tasty.

  • 170g Fat Reduced Cocoa Powder
  • 200g Desiccated Coconut
  • 170g Pitted Dates


Step 1:

Add the dates to a food processor with a tiny bit of warm water and blitz slightly.

Step 2:

Next, add the cocoa powder and 170g of the desiccated coconut to the blender and blend until fully combined.

Step 3:

Using a spoon, grab some of the mixture and roll it into a ball. Place the remainder of the desiccated coconut in a wide bowl and roll the date mixture in this to coat.

Step 4:

Continue until you have used up all the mixture. Place in mini cupcake cases or on sheets of baking paper in a tub and chill in the fridge for a few hours or overnight.

Step 5:

There you have it perfect coconutty treats ready to go.

Why not try adding your own flavours to the mix like chopped toasted nuts, berries or even a little splash of rum for a more adult twist!
