Banana & Berry Cheesecake

A no-bake cheesecake? Yes please! Perfect for those who want to do something ultra-simple, this is the treat for you.

You can even replace the banana with other fruits or berries. It’s so versatile, you can make it into a big cake or create smaller individual portions (like in a cocktail glass) if you want to fancify.

Ingredients

For the base:

  • 75g Fat-free biscuits
  • 15g Butter
  • 10g Fat-free Greek Yoghurt

For the filling:

  • 500g Quark
  • 400g Light cream cheese
  • 300g Fat-free Greek yoghurt
  • 160g Demerara sugar
  • 2 Madagascan vanilla pods
  • 3 large ripe bananas, sliced and tossed in lemon juice

For the topping:

  • A few banana slices
  • Your favourite berries
  • A bit of demerara sugar
  • A handful of the cheesecake base

Instructions

Step 1:

Blend all of the base ingredients; biscuits, butter and yoghurt and set a bit aside for the topping, then push the rest into a 30cm baking tray with the end of a rolling pin.

Step 2:

Blend the filling ingredients except the bananas and add layers of the filling ingredients and banana slices to the baking tray.

Step 3:

Chill overnight (or for at least 3 hours) so it sets. Use round or heart-shaped cookie cutters to carefully cut portions from the cheesecake.

Step 4:

Then top with remaining banana slices and berries, demerara sugar and a sprinkling of the cheesecake base.

P.S. Top tip: You can still enjoy a lovely buttery taste without all the high fat and calorie content of butter by replacing some (not all!) of the butter in your cheesecake base with fat-free Greek yoghurt.
