Savoury Potato Pancakes

We thought we would sneak in just one more pancake recipe with Shrove Tuesday this week, but this one has a slightly different savoury twist.

It’s a great recipe for using up leftover mash potato and can be dressed up with lots of tasty additions.

Ingredients

For the pancakes

  • 2 medium potatoes cooked and mashed or 300g left over mash potato
  • 1 leek chopped into small pieces
  • 2 tablespoons of plain flour
  • 1/2 teaspoon of baking powder
  • 1 egg
  • Salt and pepper to taste

Instructions

Step 1:

To begin with fry the leeks till they become translucent and just cooked. In a large bowl mix together the mash potato, cooked leeks, flour, baking powder and egg. Season with salt and pepper to taste.

Step 2:

Heat a little oil in a frying pan and place a large spoonful of your savoury pancake mixture in, flattening it into a round with the back of the spoon.

Step 3:

Cook on both sides until nice and golden and there you have it, the perfect brunch starting point!

Step 4:

From here the sky is the limit, why not try adding some goats cheese and caramelised onion chutney or how about a poached egg, spinach and hollandaise sauce for a really special eggs florentine.
