Banana Nut Muffins

Have some ripe bananas on hand but not sure what to do with them?

These quick banana nut mini muffins are just what you’re looking for, so easy to make (even your kids could do it!) with simple ingredients you likely already have in your kitchen.

Ingredients

For the muffins:

  • 200g Plain Flour
  • 3 tsp Baking powder
  • 360g Banana
  • 60 ml Skimmed milk
  • 2 Medium eggs
  • 20 ml Canola oil
  • 2 tsp Vanilla essence
  • 80g light brown demerara sugar
  • 30g Chopped walnuts

For the topping:

  • A few walnut pieces
  • A few banana chips
  • A sprinkling of light brown demerara sugar

Instructions

Step 1:

Sieve the flour and baking powder into a bowl and mix it up well. Then mix each remaining sponge ingredients  In another bowl mix the wet ingredients together well before combining all together.

Step 2:

Fill 12 heaped cupcake cases and decorate the cupcakes with walnut pieces, banana chips and a sprinkling of demerara sugar.

Step 3:

Bake standard size muffins for 25 mins or mini muffins for 15-20 mins, both at 180°C/350°F/Gas 4.

P.S. Tip tip: Canola oil is super low in saturated fat, so it acts as a great replacement for heavier oils. It’s also less likely to raise your cholesterol level compared with other oils and one the best sources of Omega 3 that protects your heart.
