Raw Chocolate Brownie

We all love the idea of raw brownies and have been thinking about this recipe for at least a week.

The trouble with a lot of raw sweet treats on the market is that they’re densely packed and calorie rich – which is fine if you are training for the marathon but not fine if you are managing weight loss. So this recipe uses a lot of fruits and rice cakes to lighten it up a bit. If you’re looking for an easy recipe with no added sugar which is gluten and dairy free then this is your man!

Ingredients

For the brownies:

  • 150g homemade or shop bought applesauce
  • 200g dates
  • 2 tsps stevia
  • 200g dark chocolate melted
  • 6 rice cakes chopped
  • 20g salted peanuts, finely chopped

Instructions

Step 1:

If you are making apple sauce from scratch simply peel and boil your favourite apples for 5-10 minutes then drain and blitz.

Step 2:

Blend your apple sauce, dates, stevia and chocolate in a food processor until smooth.

Step 3:

Add the chopped rice cakes and mix well. Press into an 8x8inch tin and sprinkle with peanuts (press them in a bit).

Step 4:

Pop into the freezer for half an hour before you slice into 12 and serve. Hey presto!

P.S. Top tip: You can happily experiment with substitutions in this recipe since there is no baking going on here. Try subbing dates for figs or prunes and subbing apple sauce with pear sauce. You could try making your variation of this recipe using other nuts (almonds, hazelnuts, pecans, you name it!). You can also use darker or milkier chocolate depending on your sweet tooth!
