Peanut Butter Bars

No-Bake Skinny Peanut Butter Bars

Sticky, nutty and incredibly easy. These bars taste indulgent but stay wonderfully light, making them the perfect treat when you want something sweet without feeling weighed down. Only around 175 calories each and ready in minutes.

Ingredients

100 g caster sugar
85 g honey
95 g reduced-fat peanut butter
95 g puffed wholegrain rice
1 vanilla pod

Method

Step 1:
Gently melt the peanut butter, sugar, honey and vanilla seeds in a small saucepan. Stir until smooth and no sugar crystals remain, then remove from the heat.

Step 2:
Add the puffed rice and fold through until every grain is coated.

Step 3:
Press the mixture firmly into a small square tin or dish. Refrigerate for around 15 minutes until set.

Step 4:
Slice into 9 squares and enjoy.

P.S. Top tip: A silicone spatula keeps everything from sticking and makes clean-up much easier.
