Skinny Tiramisu
A lighter take on the classic Italian favourite. Soft, creamy, coffee-soaked and gently sweet, this tiramisu is everything you want in a comforting dessert, but made with a more balanced touch. Perfect for when you want something indulgent without the heaviness.

Ingredients
Cream layer:
50 g egg whites, whisked to stiff peaks
250 g light cream cheese
3 tsp stevia (or preferred sugar alternative)
20 ml Marsala or brandy
10 g fructose
Coffee layer:
100 ml strong coffee (made with 1 tbsp coffee granules)
150 g sponge fingers
Finishing:
10 g dark chocolate, grated
2 tsp cocoa powder
Method
Step 1:
Mix the cream cheese with the stevia and Marsala until smooth.
Step 2:
Whisk the egg whites to stiff peaks, then fold in the fructose. Gently fold this into the cream cheese mixture to keep it light and airy.
Step 3:
Dip each sponge finger into the strong coffee for a few seconds on each side. Arrange half in the base of a 9 x 9 inch tray.
Step 4:
Spread half of the cream mixture on top. Repeat with a second layer of coffee-soaked sponge fingers and the remaining cream.
Step 5:
Grate the dark chocolate over the top, then dust lightly with cocoa powder. Chill overnight so it sets properly.
Step 6:
Slice into squares and serve chilled.
P.S. Top tip: Make them in small glasses or dessert pots for a simple, elegant treat.
